Homemade Clif bars

Sister and I have been trying to eat more healthily and exercise. The Science Sister has been working much harder than me lately! It is a bit colder here and I have been stuck inside and not motivated. As The Counselor Sister, I am on the move a lot and don't stop for lunch like I should. I often have one or two of these homemade Clif-type bars for lunch. The recipe is from my blog, which I adapted from other recipes. I am sharing some tips here. 



Sister shared one use of pumpkin spice jello pudding mix and I couldn't resist sharing another. I made a batch using each of these. Since I got the pumpkin one for $.25 thinking Sister might need them. I will be gladly using them myself!


When I made the ones pictured here, I used both puffed brown rice and crisp rice, which made for a good texture. 


I learned the hard way that really greasing up the pan  helps with spreading them out.


My sweet helper was really helping! He needed a spoon to mix up the dry ingredients with me.


According to Myfitnesspal.com the nutrition breakdown if you divide a 9x13 into 24 bars:
163 Calories
21g Carbs
  7g Fat
 4g Protein

I will add the cost breakdown if/when I can find my receipt!
